SPRING SALAD WITH SALMON

Ingredients

1 cup mixed leafy greens
5 oz – grilled salmon
⅓ cup – red onion or shallots, sliced
3 tbsp – avocado
¼ cup – cucumber
4 – grape or cherry tomatoes
1 tbsp – pumpkin seeds

INSTRUCTIONS

  1. Chop or slice red onion, avocado, cucumber, and tomatoes
  2. Lay all ingredients on a bed of mixed leafy greens.
