SPRING SALAD WITH SALMON
INSTRUCTIONS Chop or slice red onion, avocado, cucumber, and tomatoes Lay all ingredients on a bed of mixed leafy greens.
1 small head of cauliflower, finely chopped (about 2½ cups)
2 cups diced tomatoes (about 4 medium)
½ cup chopped red onion
1 diced jalapeño
¼ tsp salt and pepper
½ cup lime juice
¼ cup chopped cilantro
1 avocado, diced
