CAULIFLOWER MEXICAN CEVICHE

Ingredients

1 small head of cauliflower, finely chopped (about 2½ cups)
2 cups diced tomatoes (about 4 medium)
½ cup chopped red onion
1 diced jalapeño
¼ tsp salt and pepper
½ cup lime juice
¼ cup chopped cilantro
1 avocado, diced

INSTRUCTIONS

  1. Chop cauliflower, tomatoes, red onion, jalapeno, cilantro and avocado
  2. Combine all ingredients
  3. Enjoy!
