QUINOA CRANBERRY SALAD
INSTRUCTIONS Combine and chop greens Toss all ingredients together and enjoy!
1 tbsp extra virgin olive oil
1 tbsp coconut oil
¼ cup onion, finely chopped
6 oz ground turkey
½ cup tomato sauce (no sugar added)
Salt and pepper to taste
1. Heat the coconut oil in the skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
2. Add the ground turkey and cook until fully browned.
3. Add in the tomato sauce and continue to cook for 2-3 minutes.
4. Make 1 small well in the turkey mixture and crack the eggs into. Cover the skillet and cook for 5 minutes
