CAULIFLOWER MEXICAN CEVICHE
INSTRUCTIONS Chop cauliflower, tomatoes, red onion, jalapeno, cilantro and avocado Combine all ingredients Enjoy!

1 cup quinoa (previously cooked, cold)
2 tbsp olive oil
⅓ cup diced cucumber
⅓ cup diced tomatoes
1 tsp minced garlic
pinch parsley minced
pinch minced mint
pinch chopped green onion
2 tbsp – organic hummus
⅓ cup firm tofu, cubed
