BEET THIS SALAD (VEGAN)

Ingredients

1 medium Portobello mushroom caps
2 tbsp lemon juice
1 tbsp olive oil
5 oz baby kale
3 oz red cabbage
3 oz precooked beets, chopped
3 tbsp avocado
½ cup black beans cooked
1 tbsp Himalayan sea salt and pepper

DRESSING

VEGAN CHIPOTLE AIOLI
2oz serving

1 2 oz can chipotle peppers with adobo sauce
1 cup olive oil
½ cup garbanzo beans
½ tbsp garlic
1 tbsp lemon juice
½ cup liquid from canned garbanzo beans

DRESSING INSTRUCTIONS

  1. In a food processor, combine lemon juice, garlic, garbanzo beans and liquid, chipotle pepper with adobo sauce.
  2. Turn on processor and drizzle olive oil as it mixes until it becomes a creamy aioli texture.

SALAD INSTRUCTIONS

  1. Chop cabbage, beets, and avocado
  2. Combine all ingredients on a bed of baby kale
  3. Drizzle Chipotle Aioli
  4. Enjoy!
