BANANA CHERRY QUINOA BOWL

Ingredients

¼ cup quinoa, uncooked
2 tbsp steel cut oatmeal
1 cup water, boiling
½ cup almond or oat milk
2 tbsp chia seeds, soaked
10 pitted cherries
1 banana
2 tbsp pecans or cashews
1 tsp cinnamon
1 tsp hemp seeds

INSTRUCTIONS

  1. The night before, add boiling water to oatmeal and quinoa in a saucepan, cover tightly, and leave overnight.
  2. In the morning, stir in pecans, banana, cinnamon, hemp and chia seeds, and cherries over low to medium heat.
  3. Simmer for 10 minutes or so until the oatmeal has absorbed the liquid remaining in the bowl.
  4. Stir in milk or almond beverage as desired.
